Ingredients

  • 1 lb green beans
  • 4 cloves garlic, minced
  • 1/2 shallot, diced
  • 1-2 Fresno chili peppers, thinly sliced (remove seeds for less heat)
  • 1/4c dry white wine, plus more if needed
  • 2T unsalted butter
  • 1T olive oil
  • 1t salt
  • 1t black pepper

Instructions

  1. Rinse the green beans and snap or cut the stems off.
  2. In a large skillet, melt the butter and olive oil over medium heat. Add the diced shallot, garlic, and Fresno chiles. Cook, stirring occasionally, until they're fragrant and the shallot is softened, about 2-3 minutes.
  3. Add the green beans to the skillet and turn the heat up to medium-high. Let them sear for 3-4 minutes, stirring only once or twice, so they can get a little color. Season with salt and pepper.
  4. Pour in a couple of tablespoons of white wine to deglaze the pan, scraping up any browned bits on the bottom. Add the remaining wine.
  5. Cover the pan and turn the heat down to medium-low. Steam the green beans for 8-10 minutes, or until they're cooked to your liking. If the liquid starts to dry up, add a little more wine or a splash of water to the pan. Taste a green bean to check for doneness; they should be tender but still have a little snap.
  6. Enjoy!
