Ingredients

  • 4 large carrots
  • 4 cloves of garlic
  • 2T unsalted butter
  • 1T olive oil
  • 1t salt
  • 1t pepper

Instructions

  1. Prep the Carrots: Peel the carrots and slice them into approximately 0.5-inch thick slices. Mince the garlic.
  2. Heat the Pan: In a large skillet over medium-low heat, melt the butter and olive oil together.
  3. Fry the Garlic: Once the butter is melted, turn the heat to high. Add the minced garlic and fry for about 30 seconds, or until it becomes aromatic and just starts to turn a light brown. Be careful not to burn it!
  4. Char the Carrots: Immediately add the sliced carrots to the pan and stir to coat them in the garlic-butter mixture. Season with salt and pepper. Cook for 4-5 minutes, stirring occasionally, until the carrots develop a brownish char on the outside. This is where the magic happens.
  5. Finish Cooking: If you prefer softer carrots, turn the heat down to medium-low and continue to cook for a few more minutes until they reach your desired texture.
  6. Serve: Remove the pan from the heat, drain any excess oil, and serve immediately. Enjoy your new favorite way to eat carrots.
