Ingredients

  • 5-8 lemons, juiced with rinds cut in half
  • 100g white sugar
  • 1t salt
  • 24oz water

Instructions

  1. In a large, airtight container, combine the spent lemon rinds with the salt and a tablespoon or two of sugar. Seal the container and shake it well. Let the rinds macerate for at least 4 hours, or overnight, flipping the container every once in a while to help the process along. This draws out all the essential oils from the peels, giving the drink a more complex flavor.
  2. Once the rinds have macerated, strain them from the sugar and salt mixture. In a large pitcher, combine the macerated liquid with the remaining sugar and a small amount of the water. Stir until the sugar is fully dissolved.
  3. Add the rest of the cold water to the pitcher, along with plenty of ice. Stir everything together.
  4. Taste the rindade and adjust the sweetness and water level as needed. You can add more sugar for a sweeter drink or more water to cut the intensity.
  5. Enjoy!
