Ingredients

  • 0.5 yellow onion, finely minced
  • 4 cloves garlic, minced
  • 1.5t kosher salt
  • 1t black pepper
  • 1T olive oil
  • 0.25c fresh basil, minced
  • 0.25c grated parmesan cheese
  • 1c breadcrumbs
  • 1 egg, lightly beaten
  • 1lb ground beef, 80% lean
  • 0.33lb ground pork (or Italian sausage, veal, lamb, etc.)
  • 0.33c chicken broth

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, combine the minced onion, garlic, salt, pepper, basil, parmesan cheese, and breadcrumbs. Mix well with your hands.
  3. In a separate bowl, lightly beat the egg with the olive oil.
  4. Add the beef, pork, and egg mixture to the dry ingredients. Mix everything together with your hands, but be careful not to overwork the meat. Stop mixing as soon as everything is just combined.
  5. Form the mixture into 2-inch balls and place them in a baking pan that's at least 1 inch deep.
  6. Pour the chicken broth into the bottom of the pan to keep the meatballs moist.
  7. Bake for about 15-20 minutes, or until the meatballs are nicely browned on top and cooked through. They should be just barely pink inside.
  8. Optional: For an extra layer of flavor, finish the meatballs by simmering them in your favorite hot tomato sauce for 10-15 minutes.
