Ingredients

  • 1c all-purpose flour (00 flour if you have)
  • 1c semolina flour
  • 1T olive oil
  • 1t salt
  • 3 eggs

Instructions

  1. On a clean surface make a well in the middle of the flours and salt.
  2. Crack in eggs and add olive oil to the well. Whisk.
  3. Using a pastry scraper, your hands, or a fork, slowly incorporate the flour into the eggs.
  4. Knead dough until it is smooth (about 10 minutes). If the dough is very dry add a little bit of olive oil. If it is too wet you can always add more flour.
  5. Cover dough with a little bit of extra olive oil and wrap in plastic. Let sit for 30 minutes. If you are in a rush you can ignore this step but the pasta will be harder to work with (roll out).
  6. Roll through a pasta maker or with a rolling pin, and cut. Depending on thickness cook for 2-7 minutes in boiling, salted water. (The best way to gauge if the pasta is done is to just eat a piece).
