Ingredients
- 8oz (frozen or fresh) blueberries
- 3oz (frozen or fresh) cherries, pitted
- 50g white sugar
- Juice of 1/2 lemon
- 1t vanilla extract
- 1/4t salt
- 1T cornstarch
- 1T cold water
- 20g glucose syrup (optional, or 1T corn syrup)
Instructions
- In a small bowl, whisk together the cornstarch and cold water to create a smooth slurry. Set aside.
- In a medium saucepan over medium-low heat, combine the blueberries, cherries, white sugar, lemon juice, salt, and glucose syrup (if using).
- Simmer, stirring occasionally with a wooden spoon and gently crushing some of the fruit, for about 5-7 minutes. You want the berries to start to release their juices and the mixture to become saucy.
- Once the fruit is soft and the liquid is bubbling gently, stir in the cornstarch slurry.
- Continue to simmer, stirring constantly, for about 1-2 minutes until the filling thickens considerably and becomes glossy.
- Remove the pan from the heat and stir in the vanilla extract.
- Transfer the filling to a container and let it cool completely before using in your desired dessert. The filling will continue to thicken as it cools.
