Ingredients

  • 2c fresh parsley, finely chopped
  • 1c fresh cilantro, finely chopped
  • 5 cloves of garlic, finely minced
  • 1 shallot, finely minced
  • 1 spicy pepper (like a habanero or red chili), finely minced (seeds can be left in for more heat)
  • 1t dried oregano
  • 1t dried red pepper flakes
  • 1T kosher salt (or to taste)
  • 1t black pepper
  • ⅔c olive oil
  • ¼c red wine vinegar
  • 1 lime, juiced

Instructions

  1. Prep the Herbs and Aromatics: Finely chop the parsley, cilantro, garlic, shallot, and spicy pepper. Place all of the chopped ingredients into a large bowl.
  2. Add Dry Seasonings: Add the dried oregano, dried red pepper flakes, salt, and black pepper to the bowl. Stir everything together until evenly combined.
  3. Finish the Sauce: While stirring, slowly pour in the olive oil, red wine vinegar, and lime juice. Continue to stir vigorously until all ingredients are well-combined and the mixture is emulsified.
  4. Marinate: Let the sauce sit at room temperature for at least 10 minutes before serving. This allows the fresh ingredients to release their flavors and mingle with the liquids. The longer it sits, the more the flavors will develop.
  5. Enjoy over grilled meats, roasted vegetables, or anything that needs a bright, zesty kick.
